Do you like Seafood

I want to share a great recipe of mine… if you’re a seafood lover than you’ll like this one

Serves 2

8-10 large sea scallops (bay scallops are ok too)
Pinch of Kosher salt
1/3 cup of light, half & half or heavy cream…(heavy is better in the end but not necessary)
¼ stick of butter or margarine cut into a couple of squares
1 lemon cut in half save one whole half and cut other half in to thin slices
Fresh mozzarella broken into small pieces
Fresh ground pepper
½ cup White wine I prefer a (Pinot Grigio or a Sauvignon blanc)

Optional ingredients
Bacon (pre cooked and crumbled)
Bread crumbs for top

1 Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9 inch pie plate I recommend a smaller square oven safe dish.
2 Bring a pot of water to a rolling boil. Rinse the scallops, and drop them into the boiling water; cook for 2 minutes. (if using bay scallops then only 1 minute) Remove the scallops with a slotted spoon. Place on the bottom of the prepared pie plate.
3.Add cream wine, pepper, salt and squeeze remaining half of lemon juice into dish Spread broken mozzarella and butter squares evenly through out dish (add bacon and bread crumbs to top if used and then top with lemon slices save two for later.)
4. Place in oven and check in 15 minutes…. Should be slightly brown and bubbly

This can be served as main dish or on top of pasta…

I haven’t tried it but it seems it would also be good on top of fresh spinach leaves. Let me know this is one of my favorites and it is fairly easy to prepare. I hope you like it.

Carotenemia was a topic I wrote about three months ago when I came across a man who decided to eat carrots for two weeks and see if he would turn orange. I went back his site and found his conclusion his experiment showed clear signs of his body turning orange from a strict diet of consuming carrots. You go orange man! I think your nuts but at least you stuck with it till the end.

Thanks for the recipe. I'm not a scallops fan, but I think this would work well with something like monkfish.

By the way, that orange skin thing happened to Susan Dey during the Lori Partridge days, (according to Danny Bonaduce). The worst I've done is turn my waste green after feasting on peas. It really didn't do anything to my skin, though I think it'd be harder to work with brown.

Oh...My....God!

That recipe sounds so divine I'm drooling now. I love all kinds of seafood...and I love scallops cooked in all tht creamy fattening stuff. No wonder I struggle to lose weight *sigh*

I am gonna have to try this for sure. Thanks Jeff!

oh and yeah, I have some really bizarre google searches that bring people to me...quite alarming some of them lol

I've had a recipe of my own that doesn't stray terribly far from its similarity to the one you've posted here. I guess I am an odd one, but scallops is quite the dish in my opinion.
